Orange Creamsicle Pop Recipe



If you know me you know I love to create and keep things fun but I also only tackle the simple projects and recipes.  My life is way too chaotic to take on long and tedious stuff.  We have making popsicles on our Summer Bucket List every Summer and I was looking for a new flavor.  We've been loving fresh citrus from Bee Sweet Citrus and so I decided I wanted to make something incorporating our favorite mandarins.

This is a simple five ingredient recipe that takes little to no time.  You will need 2 mandarins, 1/2 cup of orange juice, 3 tablespoons sugar, 1 cup whipping cream and 1 tsp. vanilla.


Start by peeling mandarins and placing in a food processor or blender.  Add OJ and sugar; process for 20 seconds.






Then add vanilla and whipping cream and process for 60 seconds.  If the mixture is still runny process a little longer.



Pour into popsicle molds and place in freezer.  After a few hours add popsicle sticks and freeze overnight.  Remove from freezer and run under warm water for a few seconds and pull popsicles out of mold.  Place in plastic bag and freeze.

Hosting an Outdoor Easter Brunch


We host Easter nearly every year at our home and I just love hosting a party.  Due to the pandemic we obviously couldn't host our extended family but I wasn't going to bypass the festivities because it was just our immediate family.  I decided to create an outdoor Easter Brunch so that we could get outside to enjoy the beautiful weather but more importantly so that we could share in our neighborhood celebrations!

How to Throw a Client Appreciation Party




If you work in sales or with clients you may consider hosting a Client Appreciation Party to give back to your wonderful clients.  I recently threw just that and I have a few suggestions on how to make an impact while keeping it very simple.  

To start pick the appropriate venue:  I picked a nice local park that had picnic tables, play structures and large grass areas.  This was perfect for families and it was cheap to host there (read: free).

You don't have to serve lunch or dinner; I offered beverages and dessert and so the start time of the party was after dinner.  We have a local vendor, Pop's Emporium that makes gourmet popsicles that are to die for!  Some of my favorite flavors include Cookies & Cream, Pistachio, Cheesecake and Watermelon.  There is something for everyone's taste and they won't last long.  I highly suggest you consider having these at your next party if you are local!

I also had a local professional photographer, Melissa Gotelli on hand for clients to take family photos.  In the invitation I alerted everyone that she would be there so they would be prepared.  My thought was that clients could save themselves the time and the money to take Christmas photos and use these instead.

Towards the end of the evening I hosted a raffle where everyone got tickets based on their attendance and the clients they've referred to me in the past.  Lastly, everyone left with a very small token of my appreciation; a lotto ticket with a tag that read, "I won the LOTTO with you as my client!"

Jackson's Maternity Session


It's so strange to think these are our last moments as a family of four.  Kevin and I always said we wanted three children but to ask us after two.  After I had Madi I needed a break because being a working mom is a lot of work!  Although I always felt busy and overwhelmed our family never quite felt complete; God was still tugging at our hearts.  Kevin was ready long before I was but finally last Summer I got on board with trying for another baby.  We were perfectly okay with three girls and definitely were not having a third just to try and get a boy.  I figured there was no chance and the odds were too high for another girl.  All these months later I still haven't fully absorbed the idea of having a boy.  To say we are excited is just an understatement. 

We are so excited and feeling blessed to complete our family any day now.  I wanted to capture this milestone with a maternity session and Little Lion Photography Co did a beautiful job of preserving this moment.



Friday Favorites 3/3

I don't remember the last time I did a Friday Favorites; it's been way too long.  I haven't been doing a good job with balance so the blog has been one of the items that is taking a back burner.  That makes me very sad but it's just reality right now.  I've learned (actually still learning) that you can't give everything 100% so with work and life so busy right now some things just have to give.

Anyways I finally want to share some of the fun and activities we've been having in the Foreman Fun House.  Last Fall I was nominated by CV LUX Magazine as Best Realtor in their Luxury Awards.  I was 1 of 5 local Realtors to be nominated and I was very honored and humbled.  The event was in January which was so much fun and done really well!  I had the best table of supporters and I love each of them so much!  I didn't win the award but the recipient was so deserving and I was just honored to be nominated.  Thank you to everyone who voted for me and for all the love and support!











Recently we had a very special friend's 2nd birthday party.  The girls were so excited to get dolled up and have fun with their friends!  It was such a cute party and great to catch up with friends.  




Kevin and I celebrated Valentine's on Monday with going out to dinner but on the actual day we decided to celebrate with the girls.  Kevin brought each girl a rose and me a bouquet.  He also picked up heart-shaped pizza so we had a picnic on the floor and watched Trolls.  This holiday has sure changed but honestly I prefer it this way; it was meaningful and so much fun.  Daddy sure knows how to make us girls feel special.










My mom and I took the girls to Disney on Ice and I loved watching the girls dance and sing to almost every song.  They both loved it and I see us going many times in the future.






We are very proud of Emily and how she's flourishing in school.  We were extra proud when she was the Knight of the Month at school.  Her teacher picked her because she demonstrated good character. Her reward was pizza and popsicles with the Principal on the cafeteria stage.  She thought that was pretty cool.



My cousin Alison, is getting married next month and we just celebrated with a Fiesta Shower, which was just the cutest!  I seriously can't wait for the wedding!!!!
