Supper Sunday- Honey Teriyaki Chicken Kabobs

Honey Teriyaki Chicken Kabobs

Ingredients:
3 chicken breasts- cubed
2 zucchini-sliced
1 carton of sliced mushrooms
Olive Oil
Balsamic Vinegar
Garlic Salt
Ground Pepper
Honey
Teriyaki Marinade
Wooden Skewers

Directions:
Place mushrooms, sliced zucchini, and cubed chicken in a bowl.  Coat with olive oil and balsamic vinegar.  Drizzle honey and Teriyaki marinade over top.  Liberally season with garlic salt and pepper.  I don't measure any of the items just use my judgement.  Let marinate for at least one hour.   Mix all ingredients together then thread onto pre-soaked skewers.  Pre-heat bbq and when hot place skewers on the grill.  Turn after about 8 minutes and grill another 5-10 minutes.



Of course I only took a picture of the leftovers so it doesn't look as appetizing but they are quite good.


Fresno Friday-Young Chefs Academy

Chef Shayna of Young Chefs Academy of Fresno invited Emily to her Kinder Cooks Class this week.  Emily was so excited to be invited and she had the best time.  I accompanied Emily but it was a kids only class so I joined the other parents and watched from their viewing window.  I was so impressed with the hour long class hosted by Chef Shayna.  I was expecting a cooking class but I wasn't expecting a full learning experience.  Chef Shayna incorporated counting, letters, manners, and much more.  The class began with talking about the recipe for the week which was Blueberry Scones.  Then each child got to help put the ingredients in the bowl and stir.  During this process they learned about measuring cups and spoons and how to count and add ingredients.  Chef Shayna was wonderful with interacting with the young children and keeping them in line in the kindest and calmest manner.  I do have to say it was a very well behaved group of girls; there were 7 girls in the class ages 3 and 4 years old.
While their scones were baking Chef Shayna read a story that was relevant to the week.  The girls also got up and played a little game.  Once they were done baking, warm scones were served, the magic words were uttered, "Bon Appetit," and the girls got to try their creations.  Of course Emily finished every last bite of her scone.
I can't say enough good things about the Young Chefs Academy and Chef Shayna.  It was such a great experience and we were so lucky to be invited.  
A brief background on Young Chefs Academy: It was established in 2003 with the hope of encouraging discovery and creativity in the kitchen.  Food prep is their primary focus but they also include kitchen safety, etiquette, table setting, menu planning, and laughter.  YCA offers classes, birthday parties, camps, field trips, and more.  You can attend one class, purchase 4 packs, or become a member for the most benefits and cost savings.

Meet
Please tell us a little bit about your company and how you got started:
I took over YCA 5 years ago this past June. My passion for nutrition and working with kids is ultimately what led me to the business. My goal is to teach families the joy and value of cooking by taking the fear & mystery out of the process and including kids in the kitchen. Our programs focus on teaching kids but I have also expanded the business to include adult classes, workshops, & events. I make a point to "give back" to the community and teach classes for various organizations like Marjaree Mason & Valley Children's Hospital as well as volunteer with the Junior League of Fresno.

What has been your greatest lesson in running your own business?
You have to be flexible and have A LOT of patience.

What’s your greatest tip for entrepreneurs?
You have to be willing to work hard, get your hands dirty in all aspects of your business, and put in a lot of hours & persistence. The first 3 years in business, I worked around the clock, attended every event that I could and would come home sore and physically & mentally exhausted but I think ultimately the hard work has paid off. Now, that I have a family, I am trying to create a better balance.

What does your normal day look like?
Ha! Normal day?!… hmmm. Well no 2 days are alike but I can tell you I make frequent trips to the grocery store. My baby wakes me somewhere around 5 am and I try to snooze for a few more hours- I am not a morning person. I try to focus on quality time with my daughters in the morning and squeeze in an hour of exercise 4-5 days a week. Then when at work, I spend time juggling business management such as checking messages, setting up events, and social media marketing (which I am slowly starting to delegate to staff). That is another lesson- learning to let go. I am also responsible for menu planning for my classes and events, I will teach a class or work a special event and usually clean up and rush home to feed my 4 month old. I make a point to have family dinner and spend time together before the girls' bed time. When everyone is in bed, I will get computer work or planning done and finally hit the sack around 12:00am. It doesn't sound like much, when reading it but it is an action packed day/week.

Who inspires you?
I find inspiration in a lot of people and things I see. I especially love to see people that are pursuing their passions and truly experiencing life.
I also have to say my parents. My Dad was a great businessman, he was able to connect with anyone, anywhere. We could be traveling in Europe and would run into someone he knew. He also was great a remaining calm and bringing levity to stressful situations.
My mom has taught me to work hard and keep going She has allowed me to march to my own drum and explore my passions in life.


































Mamas on the Loose in Las Vegas

A few weeks ago I took a spur of the moment trip to Las Vegas.  My best friend Gina's sister (who is like a sister to me) just got a new job and was training in Vegas.  Gina asked me if I wanted to go and stay with Giovanna.  I couldn't pass up a trip to Vegas with the added bonus of a free place to stay.  The majorly unfortunate part was flying Allegiant Air.  Our flight was delayed several hours on Friday so we got in much later than anticipated.  Giovanna picked us up once we finally arrived and we headed straight to dinner at a local restaurant.  We finished dinner so late that we just went back to the hotel to crash (case #1 of being too old).   On Saturday morning we lounged by the hotel pool and then once everyone was up and ready we headed to the strip.  We did the smallest amount of gambling and all lost our huge bet of $20 on the first round of CRAPS. Gina and I then headed to the pool party Liquid at The Aria.  We did get in for free but gone are the days that we were offered a cabana (case #2 of being old).  We made friends with girls on a bachelorette party and hung out in the pool for the afternoon.  Between the sun, a couple of drinks, and no lunch I didn't last too long partying by the pool (case #3 of being old).  That evening we all went to Zarkana which was a great show by Cirque du Soleil.  After the show we ate at The Foundation Room which is on the top of Mandalay Bay.  The food and the views are outstanding.  We finished the evening not in a club but in the bar on the casino floor (case #4 of being old).  It was so funny because we had so much fun dancing to the 75 year old band instead of listening to house music in a club.  
Sunday we headed to Red Rock Casino because it was close to where we were staying.  It's a beautiful resort that I would love to go back to.  I won $8 on my first round of penny slots so I cashed out my big winnings and didn't play again, lol!!!!
We then headed to the airport and a VERY long story short we were delayed about 8 hours and 4 of those hours were stuck on a plane.  We got on and off a plane 3 times and it was the biggest travel nightmare of my life!!!  The staff was terrible and the service was unspeakable.  After 6 hours of waiting they were so kind to offer us a $8 voucher for food.  That literally bought 1.5 bottles of water; you couldn't get a thing.  Also it was a Sunday night so most spots in the airport were closed.
We finally made it home in the middle of the night.  Believe you me Allegiant will be hearing from me!!!
Besides the terrible traveling we had a great trip!!!! Thank you Gina for inviting me and thank you Pecchenino's for including me in such a fun weekend!

Introducing InfantileShop

Recently I partnered with Freshly Picked.  When I was planning a photo shoot to feature the moccasins I wanted a coordinating outfit to compliment the moccasins and my concept.  I wanted to play off of the brand's name so I wanted to do something with fruit and in an orchard.  When I spoke to the photographer Stacy Marini about the location, we determined Simonian Farms and a peach orchard.  It was then that I knew I wanted a peach colored outfit.  I came across InfantileShop and saw the wonderful reviews on top of the adorable clothing.  I contacted Desiree and she graciously decided to provide Madison's outfit.  It was absolutely perfect!! Please tell us a little bit about yourself:
Like my two toddlers, I basically never stop, but I don't make it look nearly as easy as they do. I'm a native Texan, proud Longhorn, Gemini, Halloween-obsessed girl that loves to have fun but greatly appreciates the rewards of hard work. 

Please tell us a little bit about your company and how you got started:

Infantile is the answer for parents that want amazingly cute kids clothing designs for a fraction of the price paid at boutiques...so when the pizza sauce explodes, it's ok! Seasonal designs, matching accessories and more are ready to ship within one day, at great prices with awesome customer service. Infantile is basically a win-win for kids and parents. 
Infantile was my maternity leave brain-child. I was spending oodles on designer kids clothes, but then keeping them in the closet because I paid too much to let my little disaster ruin them. Kids clothes had become a passion of mine, so I decided to set up a website that was all about cuteness, comfort and affordable prices. 

What has been your greatest lesson in running your own business?

My greatest lesson is that you have to understand what your customer wants and values. For me, this meant I had to be ready to respond to our instant gratification society. I now offer only ready-to-ship items and have customer service objectives that I always strive to achieve. 

What’s your greatest tip for entrepreneurs?

Don't compare your beginning to someone else's middle. I started the website in 2012 but quickly became discouraged by my lack of immediate success. I stopped and started a couple of times just because I let self-doubt take control. There are enough obstacles out there, so don't stand in your own way. 

What does your normal day look like?

A typical day is pretty much working from early morning until late at night. My husband supports my efforts, and my kids keep me going with their crazy energy. I do my best to focus on my family for a portion of my evening before I get back to work, and if I am lucky, I sneak in the the occasional guilty pleasure of some reality tv with a beer. 

Who inspires you? 

My kids inspire me to do my best and to keep life in perspective, because as long as we have our health and happiness, everything is good.

Introducing Tiggly

Emily is very bright but has the attention span of an ant!  This kept her attention for over 30 minutes and she was still very interested in playing; I cut her off for nap time.  This is seriously a miracle!  She never plays with anything for an extended period of time.  My hat's off to Tiggly for engaging my little bug and teaching her math at the same time.
Tiggly also offers Tiggly Shapes and Tiggly Words.  Tiggly Words is intended for children 4-8 years old and Tiggly Shapes is for 2-5 year olds. Tiggly Shapes teaches shapes and geometry concepts, improves language skills, and develops motor skills, spatial thinking and creativity.  Tiggly Words uses vowels disguised as toys to help children learn about language.
