Supper Sunday- Breakfast!!!

I love breakfast so every now and then we do Breakfast for Dinner.  It's such a treat, not only because I love yummy breakfast food but also because it's a break from making dinner.
Kevin loves French Toast (I'm more of a pancake or waffle girl) so I decided to make Banana French Toast recently for dinner.  It was delicious!!! 

Ingredients:

2 Bananas sliced
Bread ( I used whole wheat but you can use anything)
2 eggs
1/2 cup whole milk
1/2 teaspoon pure vanilla extract
1/2 teaspoon cinnamon
pinch salt
butter
maple syrup
confectioner’s sugar

Directions:

In a bowl, whisk together eggs, milk, vanilla, cinnamon and salt. Soak the bread in the mixture for a few seconds or until the bread is saturated. Melt some butter in a large pan and place a piece of bread down until slightly browned. Turn over and brown the other side of the bread. Once you flip the bread put banana into the pan to brown as well.  When both sides are golden, remove and add more butter, maple syrup, powdered sugar, and sliced browned bananas.





Fresno Friday-Lulu Lemon Grand Opening

Last Friday Lulu Lemon opened their new store in Fig Garden Village.  Some girlfriends and I got there just before the store opened at 10 am and there was a zoo of people.  Welcome to Fresno; anytime we get anything new Fresnans go nuts.  It was so fun to see the energy.  Lulu had goodies, cookies, a farmer's market stand, and rocking DJ.  We came to support our dear friend Brittany who runs the store.  We are super proud of all her hard work and dedication.  The store looked amazing and it had Brittany's touch all over it.  Congrats Brit!!!

I'm really looking forward to going to my first class at Lulu tomorrow.  They offer classes on the weekends which are first come first serve.

Circus 2015

The tradition lives on....
Kevin and his grandma have gone to the circus for 28 years.  Since he was in high school there have been some additions of nieces and nephews and the group continues to grow.  This year we went with grandma and mom mom (great grandma) and our dear friends Rema and Colton.  I'm not sure who's idea it was to bring a one year old because the circus held her attention for 3 seconds and she didn't sit still for more than 4 seconds.  It was a total chore.  Emily did enjoy the show; thank goodness.
We did miss the motorcycles this year but loved the trampoline section and the BMX bikers.  There also seems to be less animals.

Thank you Mom Mom for taking us to the circus and treating us to lunch!

July Meal Planning

I wanted to share my meal planning calendar for July.  In June I started meal planning and am TOTALLY loving it.  I had been wanting to do this forever because coming up with the ideas for dinner is always the hardest part for me.  I also would start thinking about dinner about 3 pm or later and it was too late for so many things.  Now I look at the next day or so and see what I need to pull out of the freezer.  I've been doing this for about a month and I'm working out some kinks but making great strides.  It took me quite awhile to plan out the whole month of July because I'm not just randomly putting meals in a slot.  For example, I have pulled pork sandwiches and hamburgers in the same week so I buy buns once and they will still be good two days later.  In the past it always seems like I buy buns, we eat a few and then throw away the rest.  Another example of taking meal planning one step further is taco salad and beef tostadas.  I will make a lot of taco meat ahead and use it for both the salad and the tostadas.  I also know that I will be gone one night so it's leftovers for the girls and Kevin that night.  I also planned out BBQ chicken one night where I will bbq tons of chicken and then use them the next two nights for Chicken Carbonara and Fiesta Ranch Chicken.
This has also helped with grocery shopping.  I went to the grocery store at the beginning of the month for the majority of the items.  Of course I can't buy everything at the start of the month because they won't last but this has helped so much for planning for the store.

Fourth of July 2015

We always have a 4th of July party but this year we decided to take a break.  It honestly broke my heart but it was nice to not have the stress (or the cleanup).  I've been so busy I didn't even decorate my house.  July 4th is one of my favorite holidays so it was crushing that I ran out of time to decorate:(
Instead we celebrated at the Marsh's.  They throw the BEST parties and we had so much fun!  It was a bbq and pool party and tons of fireworks!  Thank you Mike, Pam, and Tinsley for having us.

Emily calls the Freitas cousins her "cousins."  She loves them; it's so cute!!!  Love that we're carrying on the Foreman/Freitas tradition.  Love this family so much!
